Legumes make you feel full longer
Dr Susanna Holt, a nutritionist at the University of Sydney, recently developed the Satiety Index - a system for measuring how long different foods make you full. One of the foods she found that's rated highest on her sclae was legumes, such as lentils and chickpeas. Ah-hah.... think dhal.... mmmmmm.
Legumes are low in fat, high in fibre and contain anti-nutrients, which delay absorption, amking you feel like you've eaten a filling meal. So, do add in some chickpeas into your salad. A good mix will be pumpkin, fetta cheese, rocket & pine nuts dressed with olive oil and a good squeeze of lemon juice.
