Psst... are you taking care of your hubby's KKC?

I have two KKCs in my life. Therefore, it's my duty to ensure that they are strong and healthy.

A simply and easy way is to make sure they get lots of lycopene (a form of Vitamin A), in their diet. And where do we get lycopene? It's found in large amounts in red and yellow vegetables, especially in tomato sauce. If your man eats two or more servings of the sauce a week, his risk of prostate cancer decreases.

Hubby, Gordon and I love pasta with homemade tomato sauce. I have a basic tomato sauce that you can make at home on weekends. It's delicious on its own, in curries, casseroles, breads, rice, pastas and as a soup base. Tried and tested by many close friends and family members.

Use organic ingredients whenever possible. Organic tomatoes are pesticide free, definitely meatier and sweeter that your average supermarket ones. So, even if it's slightly more expensive, it's worth it. Moreover, it's good for your health.

Ingredients: Makes about 1 litre

1/4 cup (60ml) certified organic olive oil
1 small (80g) brown onion, chopped
6 cloves garlic, chopped
2 kg large, very ripe organic tomatoes, peeled, seeded, chopped
1 teaspoon sugar
A pinch of salt

Method:

1) Heat oil in a large saucepan; cook the onion and garlic until softened. Add the tomatoes and cook, covered, until the mixture boils.

2) Remove the saucepan lid; simmer uncovered, stirring occasionally, for about 1 hour 30 minutes or until the sauce has thickened or reduced to 1 litre. Add the sugar and the salt to taste.

3) Pour mixture into sterilised bottles or jars. Seal with a thin layer of certified organic olive oil and cool.

Can be frozen for up to six months.

If you like the fragrance of basil or oregano (i use McCormick), add some dried ones while you are cooking the onion and garlic. Or you can wash a small bunch of the fresh herb, tie it in a piece of muslin, drop the muslin bag into the sauce and remove it at the end of cooking.

REMEMBER:

DO NOT blend or process. It will turn the sauce orange, rather than maintaining the rich red colour. This recipe makes a chunky sauce. If you like it smooth, use a food mill to puree the mixture instead.

For variety add some capsicum and mushroom.
